GERD-friendly chicken pot pie is the best comfort food. This recipe is perfect for the family and will leave you with great leftovers for lunch; or, the perfect dish when having company over.
Preheat oven to 425 degrees Fahrenheit
Cut chicken into cubes. In a saucepan, mix chicken, and vegetables. Add water to cover and boil for 15 minutes. Remove from heat, drains liquid and set aside.
Melt margarin in saucepan and then stir in flour, salt, and pepper. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick, about 5 minutes. Remove from heat and set aside.
Arrange pie crust in bottom of pie pan. Put the chicken mixture in bottom of pie pan and then pour the hot liquid mixture over the top. Cover with second pie crust, seal edges, and cut away excess crust. Make small slits in middle of top pie crust.
Bake for 30-35 minutes until crust is golden brown. Let cool for about 10 minutes before serving.
